Quick & Healthy Spinach Smoothie Recipe

Quick & Healthy Spinach Smoothie Recipe

As a nursing mom I need to make sure I’m eating enough healthy foods, as well as staying hydrated, in order to keep up with the rigorous demands of being a mommy to a 7 month old!  I love making smoothies because I can fit lots of fruits and vegetables into one drink while saving time on preparation.  This recipe is my go-to for a sweet energy boost!  The ingredients may sound questionable, but even my husband drinks this smoothie when I make it for him!  Try it and let me know what you think!

Quick & Healthy Spinach Smoothie Recipe

Ingredients:

1 cup of fresh spinach
1 large banana (peeled)
1/2 cup of blueberries (fresh or frozen)
2 medium to large fresh carrots (skinned and cut)
1/4 cup of apple juice (use more liquid if you like a thinner smoothie)
1 tbsp of honey

*I add a small to medium sized cucumber if I have one in the fridge.*

Put the heavier of the ingredients in the blender first in order to ensure that the blending is as effective as possible. Blend on a smoothie setting if your blender has one. Otherwise, blend for about 45 seconds to a minute.  ENJOY!

I’ve never added cucumber to a smoothie before. Thanks for the idea!
I think your blender must be better at making smoothies than mine though. When I add carrot, I cook it first (and then cool it).
