2 Ingredient Banana Pancakes | Satisfaction Through Christ #kid friendly crowd pleaser!

These banana pancakes will blow your mind!

Not only are they healthy, so you can eat them with any clean eating, Paleo, or gluten-free lifestyle, they are also ridiculously easy.

{Ingredients}

1 Ripe Banana

1 Egg, beaten

Shake of Cinnamon (optional)

1 teaspoon of Vanilla extract (optional) I  use this!

Mash the banana, but not to the point of mush. You want a little chunk so it’s not too runny. Mix mashed banana with a beaten egg, add whatever flavors you want, blueberries, cinnamon, walnuts, chocolate chips, vanilla, etc.

Heat pan to medium-low and melt some coconut oil or a little butter in it.  The key for these crepe like pancakes is the heat. If the heat is too hot, like you are cooking a normal pancake, they will burn.  I do a medium-low and the pancakes have to cook for at least 3 minutes on each side.  Depending on your stove, it may be more or less.

And that is it! VOILA! You have a healthy, energy boosting, satisfying breakfast.

I top my pancakes off with a drizzle of local raw honey made right here in Louisiana from The Harbo Bee Co and a blueberry compote. {Recipe for my sugar-free compote is right after these pictures}

{Blueberry Compote}

1 cup of fresh blueberries or 1 cup of frozen blueberries. If you use frozen berries you don’t need to use water.

2-3 tablespoons of water for fresh berries.

Heat the saucepan to medium, add water and berries. Bring to a slight boil and let them cook down for about 15-20 minutes, stirring frequently. If you want to add a sprinkle of sugar you can, but I like the natural and fresh taste of just adding water.  You can use strawberries, blackberries, or raspberries if you don’t like blueberries.

Pour on top of the pancakes, and oh my goodness you feel like your eating a restaurant quality breakfast!
